Cooking with Sake: Quiche with Spring Vegetables

Full of the sweetness of vegetables! This recipe is a quiche that lets you enjoy the natural sweetness of seasonal spring vegetables, such as cabbage, and onion. It is very easy to make with a frozen puff pastry sheet, so why not give it a try? To make the quiche golden brown, spray some Japanese sake on the surface before baking it in the oven.

Ingredients (18-cm tart pan)

70g of onion
100g of cabbage
60g of asparagus
40g of bacon
20g of butter
2 frozen puff pastry sheets
(A) 2 eggs
┗ 80cc of milk
┗ 90cc of fresh cream
┗ 2 tablespoons of grated cheese
┗ A pinch of salt
┗ A pinch of pepper
┗ Japanese sake as needed

How to Make: Steps

Step 2:
Slice the onion and cut cabbage into pieces, and cut the bacon in a rectangular shape. Cut the asparagus diagonally into 4-5 cm length.

Step 3:
Make some holes in the puff pastry sheet using a fork and place it over a heatproof plate.

Step 4:
Heat butter in a pan and add bacon. When the bacon is cooked, add the onion and cabbage and saute lightly. Then add them into (Step 3).

Step 5:
Put (A) into a bowl and mix. Then, pour into (Step 4) and spread the asparagus on top for decoration.

Step 6:
Pour Japanese sake into a spray bottle and spray on the surface of the quiche. Then, bake at 200℃ for 15 minutes.
*If you don’t have a spray bottle, use a spoon to sprinkle Japanese sake on the quiche.
