2 slices of yellowtail fillet
┗1 teaspoon Japanese sake
1 tablespoon of flour
(A) 2 tablespoons soy sauce
(A) 2 tablespoons sake
(A) 2 tablespoons mirin
(A) 1 tablespoon sugar
4 shishito peppers
1/2 tablespoon of salad oil
Sprinkle sake over the yellowtail and let sit for 15 minutes. Then wipe away the excess water and lightly coat the yellowtail in flour. Poke holes in the shishito peppers with toothpicks.
Heat oil in a frying pan, grill the shishito peppers, and then remove them from the pan. Add the yellowtail to the same pan and cook over medium heat until nicely browned.
Wipe away excess water from the pan with a paper towel, add the well-mixed ingredients (A) and let it stew for a bit. Serve in a bowl with the shishito peppers.
Tip: Sake helps to mellow out the smell of fish and also softens the yellowtail!
