Sake and Snack Pairing: Easy Chicken Stir-Fry

An easy and delicious recipe using a vegetable mix and packed full of nutrients!
This recipe is based on Gifu’s famous chicken chan-yaki (a Gifu-style chicken stir-fry). Vegetable mixes make it easy to make and add color and nutrition!
This is an excellent meal that provides good quality protein from the chicken thigh and vitamins, minerals, and fiber from the vegetables.

This dish pairs beautifully with lighter types of sake! This includes sake that is light and smooth like the daiginjo or fruity types of sake, like the junmai daiginjo!

Ingredients (2 Servings)

200g chicken thigh
1 bag of vegetable mix
1/2 bunch garlic chives
1 tablespoon of sesame oil
(A) 1 tablespoon of miso paste
(A) 1 tablespoon of soy sauce
(A) 1 tablespoon of honey
(A) 2 tablespoons of sake
(A) 1 teaspoon of grated garlic
(A) 1 teaspoon grated ginger

How to Make: Steps

Step 1:

Using a fork, puncture the skin of chicken thigh and cut into bite-sized pieces. Cut the garlic chives into 3cm pieces with kitchen scissors.

Step 2:

In a bowl, mix the ingredients (A) and add the chicken thighs to the marinade. Massage the marinade into the chicken for around 10 minutes.

Step 3:

Heat sesame oil in a frying pan, add (Step 2,) the chicken with the marinade, and stir-fry till cooked. When the chicken thighs are cooked through, add the vegetables and stir-fry until the vegetables still have a good bite and serve onto a plate!

Tip: The vegetable mix used in this recipe includes bean sprouts, carrots, cabbage, and chives. Feel free to use other ingredients as well!
