A classic local grilled snack from Miyazaki Prefecture, a prefecture well-known for its chicken!
For nights when you are a little hungry. Enjoy a delicious dinner with Miyazaki Prefecture’s famous “jidori” (a type of free-range chicken). Grill with the chicken skin on for crispy skin and juicy chicken, and serve it with shichimi and yuzu pepper to make it even more delicious. You can make this classic snack at home, and it will pair deliciously with your drinks!

Step 1:
Cut the chicken thigh with bone with a knife to even out the thickness, make a few cuts on the skin, rub salt into the skin, and cook on a fish grill or fish grill net over high heat.
Step 2:
When the skin is crispy, remove the bones and cut them into bite-sized pieces.
Step 3:
When the chicken is cooked through, place it on a plate and garnish it with shichimi or yuzu pepper to your liking!
Tip: Grill the chicken on a grill to obtain a flavor similar to charcoal grilling, but be careful not to ignite the chicken oil.
