Cooking with Sake: Simple and Healthy Meatloaf

Make your dinner table colorful and bright! This meatloaf filled with quail egg and vegetables is a colorful and festive dish to brighten up your Christmas table. It’s full of vegetables, so it’s also very healthy!

Mixing sake well into the ground meat helps hide any gamey meat smells and sake over the meatloaf before baking results in a golden brown bake! The deliciously rich aroma will fill your oven and room!

Ingredients (Preferred Amount)

1 onion
1/2 red bell pepper
1/2 yellow bell pepper
1/4 broccoli
6 cherry tomatoes
(A) 1 tablespoon of olive oil
┗ A pinch of pepper
1 tablespoon of olive oil
500g of ground meat
(B) 20g of bread crumbs
┗ 1 egg
┗ 1 tablespoon of sake
┗ A pinch of nutmeg
┗ A pinch of salt
┗ A pinch of pepper
10 boiled quail eggs
(C) 1 tablespoon of gravy (after the meatloaf is baked)
┗ 3 tablespoons of sweet sauce
┗ 3 tablespoons of ketchup
┗ 1 tablespoon of mayonnaise

How to Make: Steps

Step 1:
Roughly dice the onion, red bell pepper, and yellow bell pepper. Cut the broccoli into florets, and wash them. Wash the cherry tomatoes as well. Mix the broccoli and cherry tomatoes with (A) and wrap them with aluminum foil. Preheat the oven at 180℃.

Step 2:
Heat the olive oil in a pan and stir-fry the chopped onions and bell peppers. Move them on a plate and let it cool.

Step 3:
Place the ground meat and (B) in a bowl and knead until it becomes sticky. Then, add (Step 2) to the mixture.

Step 4:
Spread plastic wrap over the pound cake mold, spread half of ( Step 3), and remove the air from it. Then, line up the quail eggs. Put the remaining half, remove the air again, and fix the meatloaf into a rectangular shape.

Step 5:
Spread parchment paper over the baking tray. Remove the plastic wrap from (Step 4) and place it on the tray. Prepare sake into a spray bottle, sprinkle it over the meatloaf, and bake at 180℃ for 30 minutes. Take it out from the oven, wrap it with aluminum foil, and bake for another 15 minutes. At the same time, bake the broccoli and the tomatoes from (Step 1). Stick a wooden skewer to the meatloaf, and when you notice that the gravy is clear, take out the meatloaf.

Step 6:
Place (C) in a heatproof container, spread plastic wrap over it, and microwave for 2 minutes.

Step 7:
Cut the meatloaf, dish it up, and pour the sauce of (Step 6) over it. Apply the broccoli and cherry tomatoes on the side of the plate.
