Cooking with Sake: Salmon Flake Omelet

DHA is good for your liver!
When you eat too much over the New Year holidays, you may end up with not only some extra weight, but also excess fat in your liver. Salmon is rich in DHA, which lowers your triglycerides and effectively carries out excess fat from the liver. Therefore, by adding some salmon flakes to an omelet, the dish will help to increase your nutrient intake. Also, by adding sake, you can enhance the umami, and also ease the saltiness of the mayonnaise.

Ingredients (2 servings)

2 tablespoons of salmon flakes
1 tablespoon of chopped parsley
3 eggs
(A) 1/2 tablespoon of mayonnaise
┗ 1 teaspoon of Japanese sake
┗ A pinch of salt
┗ A pinch of pepper
1 tablespoon of vegetable oil
Tomato ketchup as needed
40g of asparagus
40g of carrot
40g of cauliflower

How to Make: Steps

Step 1:
Cut the stem off the asparagus and cut the asparagus flower into 3cm pieces. Peel the carrot and chop it in small chunks. Cut the cauliflower into florets and boil them.

Step 2:
Beat the egg in a bowl, add salmon flakes, chopped parsley, and (A) and mix well.

Step 3:
Put half of the vegetable oil in the pan and heat it. Add half of (Step 2) and stir the egg from the edges inward in a big, circular motion. When the egg is half-cooked, fold it from the front side and arrange it into a leaf shape. Dish up, apply some tomato ketchup if you like, and serve (Step 1) on the side.
