Elegant flavor and aroma!
This elegant spring-like dessert is fragrant with sake and cherry blossoms.
With its gentle sweetness and refreshing taste, this is a perfect dessert to enjoy while viewing the cherry blossoms. In this recipe, sake is used to mellow out the flavor.
Sake types such as junmai, ginjo, and honzojo are recommended for this recipe!
8 pieces of salted cherry blossoms |
10g of powdered gelatin |
50ml of water |
(A) 300ml of milk |
┗ 50g of sugar |
┗ 100ml of sake |
(B) 50ml of water |
┗ 1.5 tablespoons of sugar |
┗ 1 teaspoon of sake |
Step 1:
Wash the pickled cherry blossoms and soak them in water (not included in recipe) for about 5 minutes to remove the salt. Reserve 4 of the nicely shaped cherry blossoms for decoration, and chop the rest.
Step 2:
Sprinkle gelatin into 50ml of water and let it soften for at least 15 minutes.
Step 3.
Combine (A) in a saucepan over medium-low heat. When the sugar dissolves, turn off the heat, add (Step 2) and dissolve completely.
Step 4:
Place the bottom of the pot in ice water and let it cool while stirring and scraping the bottom of the pot. Mix in the chopped cherry blossoms and pour the mixture into the bowls in equal portions. Refrigerate to harden (2 to 3 hours).
Step 5.
Make the syrup. Combine (B) in a saucepan over medium-low heat. When the sugar dissolves, turn off the heat and allow to cool. Place cherry blossoms on top of (Step 4) and pour syrup over them.
