Cooking with Sake: Marshmallow and Yogurt Parfait

A mellow and healthy parfait.

Nikiri-shu (sake with its alcohol evaporated) is also used in desserts and in this recipe, it adds umami and a smooth flavor to the marshmallow yogurt. Also, soaking the castella in syrup made with Nikiri-shu and sugar makes a parfait particularly enjoyable for adults. The alcohol from the sake is burned off when heated, so children and light drinkers can also enjoy this dessert.

Ingredients

[A]
┏ 50g of marshmallows
┣150g of plain yogurt
┗ 1 tablespoon of Nikiri-shu
・1/8 of a melon
・6 blueberries
・60g of castella

How to Make: Steps

[STEP1]
Place (A) in a container, cover it with plastic wrap (or a lid), and let it rest overnight.

[STEP2]
Spread the castella (cut in 3cm-squares) on the plate, then decorate the dish with the marshmallow and yogurt (step 1), melon (cut in bite-size pieces), and blueberries.
