Cooking with Sake: Ginger Soup with Pork and Burdock Root

A refreshing, delicious, and aromatic dish for the chilly months!

The chilly weather can really take a toll on your body. Here’s a quick soup dish that’s perfect to help you recover from fatigue and keep your energy levels up in the cold! The pork contains vitamin B, the spring onions are full of allicin, and the glass noodles are a source of carbohydrates. This dish has everything you need to increase your energy in one soup! Add some sake to enhance the umami level!

Ingredients (2 Servings)

100g of Pork Belly (Slices)
80g of burdock root
1/2 a Batch of Spring Onion
15g of Dried Glass Noodles
2 Teaspoons of Sesame Seed Oil
500ml of Water
(A) 1 Tablespoon of Grated Ginger
┣ 1 Tablespoon of Japanese sake
┣ 2 Teaspoons of Japanese-style Dashi Stock
┗ 2 Teaspoons of Soy Sauce
2 Teaspoons of White Sesame

How to Make: Steps

Step 1:
Cut the sticks of glass noodles in half with kitchen scissors, and cut the spring onions diagonally. Then, cut the pork belly into 1.5cm wide slices.

Step 2:
Cover a pot with sesame seed oil and then heat the pork belly. When the pork belly is thoroughly cooked, add the spring onion and burdock into the pot and stir-fry. Add (A) with water into the pot and boil for 5 minutes, making sure to separate the foam. Lastly, pour into soup bowls and top with white sesame seed.
