With the winter season and holidays coming up, many people might find their mind and body feeling a little dull. Let’s re-activate it with this recipe! This fruit cake is rich in sugar, which is a great source of energy!
Dried fruits are often made with spirits, however, Japanese sake also makes delicious dried fruits! The picture below shows the difference when using soaking dried fruits in warm water before soaking them in sake.
The warm water helps the dried fruits to absorb sake into the core and also the cake to have a fluffy texture. This cake is perfect as a snack for children and for special treats.

60g of granulated sugar |
15g of honey |
90g of flour |
2.5g of baking powder |
75g of unsalted butter (melted) |
2 tablespoons of sake |
20g of raisin |
20g of dried fruits |
20g of dried mango |
Step 1:
Cut dried mango, raisin, and other dried fruits into 1cm pieces. Soak them in warm water, drain the water off, and soak them again in sake for more than an hour.
Step 2:
Put the egg, granulated sugar, and honey in a bowl while keeping the bowl warm in hot water. After 2-3 minutes, take out the bowl from hot water and mix until the batter becomes white and foamy. Then, add sake in (Step 1).
Step 3:
Sift the flour and baking powder. Add half of it into (Step 2) and mix, and then add the other half. Mix lightly with a spatula.
Step 4:
Add half of the melted unsalted butter first, mix, and then add the other half. Then, add the dried fruits in (Step 1) and mix lightly again.
Step 5:
Pour the batter into a mold and bake at 160°C for 30-35 minutes.
