Cooking with Sake: Edamame Potage

Enjoy the Smooth Texture!
Continuous hot days tend to make you lose your appetite, but you might enjoy drinking some soup. Fresh cream adds a smooth texture and a rich taste to the healthy edamame (green soybeans). Edamame and tofu are both rich in vitamin B1, so let’s get over summer fatigue with “the power of beans”!

Ingredients (2 Servings)

100g edamame (green soybeans)
120g silken tofu
2 tablespoons of nikirizake (sake with its alcohol evaporated)
50cc fresh cream
3g granulated consomme
50cc hot water
A pinch of salt
A pinch pepper

How to Make: Steps

Step 1:
Boil and cool the edamame, take them out from the pod, and remove the thin skin. Put four peas aside for decoration.

Step 2:
Put (1), silken tofu, granulated consomme (dissolved in hot water), and fresh cream into the blender, and mix until it gets smooth. Adjust the taste with salt and pepper, serve in a soup bowl, and decorate it with the edamame.

To cool down more, pair it with a refreshing sake samurai cocktail!
