The sweetness of dried fruits and the freshly-roasted flavor of walnuts!
The rich taste of cream cheese brings out the sweetness of the dried fruits and the freshly-roasted flavor of the walnuts. It is easy to make, and since it is not too sweet, it matches well with alcohol. Sake makes the dish more flavorful and also eases the sourness of the dried fruits.
50g walnuts |

■ 40g cranberries |
■ 40g apricot |
■ 40g mango |
2 tablespoons sake |
200g cream cheese |
(A) 1/4 cup of milk |
┗ 2 tablespoons sake |
1/4 cup water |
10g powdered gelatin |
Honey as needed |
Step 1:
Bake the walnuts at 170°C for 10 minutes. Soften the dried fruits by sprinkling sake, and cut them into easy-to-eat sizes.
Step 2:
Leave the cream cheese at room temperature until it gets soft. Put it in a bowl and smoothen with a whisk, then add (A) little by little and keep mixing. Add (Step 1) and mix lightly.
Step 3:
Add gelatin in the water, microwave for one minute, and mix well. Then, add it to (Step 2) and mix again.
Step 4:
Wet the inner part of the terrine mold, pour the batter into it, and cool it in the fridge. After it becomes solid, take it out from the mold and cut it into pieces. Decorate it on a plate and pour some honey if you like.
