It’s that time of year when we start to miss sweets.
This recipe brings out the best of the sweet potatoes that are in season. The addition of sake enhances the flavor of the sweet potatoes. Even with less sugar, you will be satisfied with the sweetness of the sweet potato.

500g of sweet potato |
(A) 30g of sugar |
(A) 1/2 an egg yolk |
(A) 1 tablespoon of sake |
(A) 10g of butter |
(B) 1/2 an egg yolk |
(B) 1 tablespoon of sake |
Step 1:
Peel the sweet potatoes, cut into pieces, boil and then mash.
Step 2:
Add (A) to (Step 1) and mix well. Then place in aluminum mold.
Step 3:
Use the egg yolk mixture mixed with sake and brush lightly over (Step 2) and bake in the oven at 180℃ for 10-15 minutes until the surface is lightly browned.
