A mellow and healthy parfait.
Nikirizake (sake with its alcohol evaporated) is also used in desserts and in this recipe, it adds umami and a smooth flavor to the marshmallow yogurt. Also, soaking the castella in syrup made with nikirizake and sugar makes a parfait particularly enjoyable for adults. The alcohol from the sake is burned off when heated, so children and light drinkers can also enjoy this dessert.

┏ 50g of marshmallows |
┣150g of plain yogurt |
┗ 1 tablespoon of nikirizake |
・1/8 of a melon |
・6 blueberries |
・60g of castella |
Step 1:
Place (A) in a container, cover it with plastic wrap (or a lid) and let it rest overnight.
Step 2:
Spread the castella (cut in 3cm-squares) on the plate, then decorate the dish with the marshmallow and yogurt (Step 1), melon (cut in bite-size pieces), and blueberries.
