Located at the foot of the Yatsugatake Mountains in Hokuto City, Yamanashi Prefecture, our small brewery is blessed with abundant mountains and water sources. Founded in 1865 (Keio 1), we produce both sake and junmai shochu.
The name Takenoi originates from the first brewery owner, Buzaemon Shimizu, and the well that draws pure spring water from the Yatsugatake mountain range.
For brewing, we use Yamanashi-grown rice as well as premium sake rice sourced from across Japan. The yeast essential for fermentation primarily includes flower yeast strains developed by Tokyo University of Agriculture.
