Founded in 1832 (Tenpo 3), our brewery was named Tatenokawa by Lord Sakai of the Shonai Domain, who appreciated the sake's fresh and transparent flavor.
In 2010, we transitioned all of our sake production to junmai daiginjo, focusing on creating the highest-quality sake. We place particular emphasis on high-precision rice polishing technology, crafting sake with a rice polishing ratio of 20% or less. This effort led to a historic milestone in the sake industry with the achievement of a rice polishing ratio of 1% for the first time ever.
Additionally, we are exploring new horizons by incorporating wine fermentation techniques into sake brewing, continually challenging the future of sake.
While preserving the transparent and refined flavors for which we are known, we remain committed to shaping the future of Japanese sake.
