Shizuoka Hiraki Shuzo is a newly established brewery founded in 2012.
Its origins trace back to the early Meiji period when its founder, Kihei Totsuka, began as a rice merchant under the trade name "Hiraki." Starting from a rice wholesaler, Hiraki expanded its business into sake distribution and later acquired a brewing license, transitioning into the production of sake.
As Hiraki Shuzo, it produced local sake in Shizuoka until the mid-Showa era. However, the brewery eventually ceased sake production in the region and relinquished its brewing license. After more than 50 years, the brewery revived its sake production at the foot of the Abe River, known for its clear streams.
Today, the brewery exclusively produces junmai sake, with an annual output of approximately 200 koku (around 36,000 liters), primarily for local consumption.
