Founded in 1832 (Tenpo 3), our brewery originated as a sake producer for travelers passing through Shimada-juku, offering comfort to discerning visitors from Edo.
Our goal is to create sake that shines with the unique character of a local brew. We prioritize raw material processing, using the latest rice polishing equipment to perform in-house milling. For koji production, we adhere to the philosophy of "putting in the effort and crafting sake with the senses." All of our sake, from regular offerings to daiginjo, is made using traditional 10kg koji boxes.
We aim to craft sake that pairs beautifully with meals, featuring the elegant and refined aromas characteristic of Shizuoka yeast, along with a deep, full-bodied flavor profile.
