We draw exceptionally soft water from a depth of 120 meters, sourced from the snowmelt of the Akaishi Mountains in the Southern Alps. With a flow rate of 260 liters per minute, this pristine water is maintained at a consistent temperature of 16°C throughout the year, forming the foundation of the flavor and quality of our renowned sake, Aoitenka.
Rather than prioritizing efficiency, we remain committed to preserving Japan's traditional brewing methods. For steaming rice, we use traditional wagama pots instead of mechanical steamers, and for pressing, we employ the fune-shibori method using traditional fune presses rather than automated machines. These time-honored practices ensure the authenticity and craftsmanship of our sake.
