Founded in 1886, the brewery in Okayama believes that true local sake embodies a harmonious trinity of local rice, water, and craftsmanship. All the rice used is sourced exclusively from Okayama Prefecture, and the brewing water comes from the underground streams nourished by the Takahashi River system, one of the region's three major rivers. Under the expert techniques of the traditional Bichu Toji brewers, the sake reflects the bountiful blessings, rich traditions, and natural beauty of Okayama. The brewery continues to craft sake that embodies the essence of this fertile land.
