Founded in 1806, Kamo City, where the brewery is located, has long been called the "Little Kyoto of Hokuetsu" and is famous for its native colonies of snow camellias. The name "Koshino Yukitsubaki" comes from the dedication of the snow camellia, which endures harsh winters and blooms beautifully in the spring, and it is this dedication that we hope to embody in our sake brewing. Since 2011, we have been a "junmai brewery" that specializes in high-quality junmai, junmai-ginjo, and junmai-dai-ginjo sake, and while maintaining our traditional handmade brewing methods, we are also actively introducing brewing equipment that incorporates the latest technology to keep pace with new changes in our daily sake production.
