Our brewery serves Yahiko Shrine, dedicated to Ame-no-Kaguyama-no-Mikoto, a descendant of the sun goddess Amaterasu. We use the spring water from Mt. Yahiko as our brewing water and exclusively source rice, including Yamadanishiki, from Yahiko Village.
Since our founding in 1838, we have upheld the family creed: “Do not focus on quantity; always strive for pure and refined brewing.” Guided by this principle, we maintain meticulous brewing practices such as long-term low-temperature fermentation and bottle pasteurization, producing small-batch, handcrafted sake with the utmost care.
