Nestled beside Fukushima Lagoon in northern Niigata Prefecture—an area renowned as one of Japan's premier stopover sites for swans and designated as one of "Japan's 100 Best Natural Landscapes"—a small craft sake brewery was established in 2021. The brewery also features a café and offers guided tours.
Uniquely, the brewery holds both a license for producing craft sake (classified as other brewed alcoholic beverages) and a license for producing Japanese sake exclusively for export, a rarity in the industry. Guided by the motto of creating "A diverse range of flavors that evoke delight and emotion," the brewery is committed to sustainability. It experiments with natural cultivation rice and unconventional ingredients such as kuromoji (spicebush) and tomatoes.

Tasting: Free for small samples. There are also paid tastings available in the cafe space where you can enjoy the sake at your leisure.

From the large windows of the attached Shop & Cafe, you can freely view the inside of the brewery (fermentation room) during business hours.
