"Kitoka Honten" is a long-established sake brewery founded in the first year of the Meiji era, located at the entrance to the Yoshino-Kumano National Park in southern Nara Prefecture. Its signature sake, "Yatagarasu," is named after the mythical sacred bird from Japanese legends. The water used to brew "Yatagarasu" is "Oku-Yoshino Forest Water," drawn from small streams flowing through the deep mountains of Yoshino. This water, low in iron and well-balanced in minerals, contributes to the creation of sake with gentle aromas and flavors. Leveraging these water characteristics, the brewery emphasizes harmony between flavor and aroma, crafting sake under the concept of "the more you drink, the better it tastes." By bringing out the full umami of the rice with a modest fragrance, their sake pairs perfectly as a table drink.
Currently, the brewery is introducing a new line, the "Yatagarasu Core Series," exclusively available at select retailers, featuring a fresh design of the Yatagarasu by the brewmaster.
