Daishinshu is a sake brewery located in Matsumoto City, Nagano Prefecture.
The brewery’s brewing water comes from the snowmelt of the Northern Alps, which journeys underground over many years before reemerging. This water is known for its soft mouthfeel and delicate texture, lending Daishinshu's sake a clean, refreshing, and smooth flavor that reflects the purity of its source.
The sake rice is cultivated in partnership with contract farmers primarily in Matsumoto. Surrounded by mountains, the Shinshu region experiences significant temperature differences between day and night and maintains low humidity, creating ideal conditions for producing healthy rice rich in umami.
Crafted by skilled brewers who have honed their techniques over the years, Daishinshu's sake captures the essence of the natural environment, embodying the blessings of Shinshu’s unique climate and landscape in every drop—a truly divine sake.
