Shirasugi Shuzou is located in Kyotango City, the northernmost region of Kyoto, and has been crafting sake for over 240 years since its founding in 1777.
Our sake is made by a small team of six, including the brewmaster and president, Satoru Shirasugi, with an annual production of approximately 300 koku.
We exclusively use delicious table rice grown locally in Tango, one of Japan’s premier rice-producing regions, and do not use any specialized sake-brewing rice such as Yamada Nishiki.
Recently, we have been exploring new horizons in sake brewing, creating sweet and tart sake using black and white koji, and experimenting with innovative methods that have never been tried before.
