Jihei, the Maker of Rice Shochu Since the Edo Period
Matsushita Jouzoujou is a historic producer of Kumamoto's famous Kuma Shochu, founded during the Edo period. Shochu production began with the first-generation Jibei in Mizukami Village, part of the Sagara Domain, and has been passed down through 14 generations. Today, the 14th-generation head of the family, the first male heir born in 108 years, carries on the legacy.
Locally Produced Rice Shochu, Starting with Rice Cultivation
The brewery is committed to environmentally conscious rice farming, using Tachiharuka rice grown in collaboration with family farmers.
The rice, cultivated in the rich natural environment of Mizukami Village, Kumamoto Prefecture, is grown with minimal use of chemical fertilizers and pesticides. This careful approach results in a deeply flavorful and environmentally friendly shochu.
