Kuma and Hitoyoshi, located in Kumamoto, Kyushu. Here, in the Hori no Sumi area, pristine water emerges after passing through the granite of Mt. Shiraga in the Kyushu Mountains over many years.
With over 500 years of Kuma Shochu history, Matsunoizumi Shuzo has faithfully carried on the shochu culture cultivated by our predecessors. Since our founding, we have preserved the traditional craftsmanship of Rice, Water, People, and Distillery.
While cherishing this heritage, we remain dedicated to meticulously crafting even better shochu with care and precision.
At the shochu distillery, you can taste aged and reserve shochu, and draw high-quality underground water used in the shochu-making process. This water is also used in the on-site dining area, where you can enjoy dishes like dago-jiru, made with fresh, locally sourced ingredients.
