Founded in 1844 (Koka 1), Kubota Shuzou uses the pristine spring water of the Tanzawa mountain range to produce its sake, Sagaminada. The area surrounding the brewery remains as rich in natural beauty as it was at the time of its founding. In spring, bamboo shoots and wild vegetables thrive, while in summer, fireflies light up the night—a scene so picturesque that the location has been used for film shoots.
The brewing of Sagaminada is based on faithful adherence to the fundamentals of ginjo brewing. However, the ginjo aroma is kept mild and natural, allowing the umami of the rice to take center stage. The result is a well-balanced sake crafted to pair seamlessly with meals.
While preserving the legacy of this historic brewery, we strive to be a next-generation sake producer, continually pursuing greater levels of excellence in flavor.
