Introduction

All of our products meet the criteria for geographical indication. Each batch is brewed using traditional methods passed down through generations and is stored exclusively as unpasteurized sake. Our brewing water comes from spring water that has fed the same well for hundreds of years, and all rice used is sourced within a 5-kilometer radius of the brewery.

Our Kimoto Junmai Daiginjo contains 410 μg of 5-aminolevulinic acid per 100 ml, a substance known to inhibit COVID-19. In 2020, it was awarded the highest gold prize at the New World section of the Catad'Or Wine Awards, and was highly praised as a "Burgundy white" by Robert Parker in his publication. All of our sake is junmai daiginjo with a polishing ratio of 50% or less, with the highest reaching 27%. Additionally, all of our sake is unfiltered.
