Our brewery, located in Nakatsugawa City, Gifu Prefecture, is the smallest sake brewery in Japan, with a history dating back to the Edo period.
With an annual production of just 50 koku (about 9,000 liters), we are a truly small-scale brewery. We use the soft spring water of Onozawa, which flows from the mountain behind the brewery, and adhere to traditional methods. Our rice is steamed in wooden vats, and the sake is pressed using wooden tanks, ensuring that every step of the process is entirely handcrafted.
