Introduction

Using pristine groundwater from the Hida Mountain Range and premium sake rice, primarily Hidahomare, the brewery creates exceptional sake with a rich umami profile.

From October to April, the brewery produces 550,000 bottles of sake, but this is the maximum capacity, making all their offerings limited editions.

Their sake-making process still relies heavily on human craftsmanship. Traditional wooden tools are used, and the brewers value the direct experience of aromas and textures through their hands.

Each bottle is crafted with heartfelt dedication, aiming to create a sake so memorable that customers will say, “I’m so glad I discovered Hourai!” This is the guiding spirit behind their pursuit of exquisite sake.
