Hida Takayama, surrounded by majestic mountains such as Norikura, Hakusan, and Ontake, is a sacred land for sake brewing, blessed with cold winter climates, pristine brewing water, and excellent sake rice.
Our brewery was founded in 1839 (Tenpo 10) during the late Edo period. In the 1970s, we shifted our focus entirely to quality, eliminating the use of additives such as sugar and flavoring agents, as well as discontinuing OEM production for major brands. Since then, we have specialized in direct sales and production.
Our sake is known for its rich and full-bodied flavor. When newly brewed, it can be rough in taste and requires long-term aging to achieve a smooth and mellow character.
As a local sake producer, we exclusively use rice grown in Hida and specialize in aged sake (koshu), focusing on producing mature, well-aged sake after several years of storage.
