Located in Uchiko Town, Ehime Prefecture, nestled in a mountainous rural area. Uchiko, a town of 16,000 residents, is known for its preserved streetscapes from the Edo to Meiji periods, making it a popular tourist destination. At the heart of this small town lies a quaint sake brewery founded in 1920 (Taisho 9) by a group of eight local sake brewers.
The brewery utilizes sake rice grown by contracted local farmers and the abundant water sourced from the Odami Valley, which flows into the Oda River. Committed to traditional methods, all sake is handcrafted in the original wooden brewery building that has stood since its founding.
Its flagship brand, Kyohina, is characterized by a subtle and elegant aroma. On the palate, it offers a harmonious balance of the rice's umami and a clean, crisp finish, making it an ideal companion for meals.
