Wakabayashi Sake Brewery is a small sake brewery located in Onsenzu-cho, Ota City, Shimane Prefecture, founded in 1869. Onsenzu-cho has long been known as a hot spring town, famous for the quality of its hot springs.It also prospered as a port for transporting silver from the Iwami Ginzan Silver Mine during the medieval and modern periods.Because the brewery is located near the sea, the brewing water used for sake is not from a well, but from a mountain 4 km away from the brewery.
The rice used to make sake is mainly Yamada-Nishiki, which is purchased from contract farmers in the prefecture, and many other rice varieties suitable for sake brewing produced in Shimane Prefecture are also used.
