Founded in 1712 and with a history of more than 300 years, it is a sake brewery located in Oku-Izumo, Shimane Prefecture. We use the slightly soft water of the Hii River, which originates from Mt. Sentsu, a sacred peak, and local sake rice grown by one of the leading rice regions in western Japan, and brew sake while being supported by the harsh but rich nature of Oku-Izumo.The sake brewing that we cherish is the moderate aroma, mellow umami, and good aftertaste. It is characterized by a well-balanced sake that goes well with any dish and does not get tired of drinking.
This brewery has also contributed to the development of Japan sake manufacturing technology and improved productivity, and is also known as the brewery where "foamless yeast", which is the mainstream in modern sake brewing, was discovered. rice grown in one of the most famous rice-producing areas in western Japan.
